  3. You can eat 50 heads lettuce and no B-12.
    So have balance.
    Like this for example.
    I make this.
    1 ham hock
    yellow squash
    escarole (or spinach or both)
    onions
    black bean
    garbanzo bean
    tomatoes
chicken stock (use "Better than buillion" brand) Delicious! A paste from whole chicken, NOT a cube

Ok, cook onion in pot with ham hock, couple minutes.
Add about 1 1/2 gallon of water, and 3 or 4? spoonful of the paste from chicken(taste it and see what you like for how much paste.)
put in tomatoes and very little brown sugar (1/2 tsp?)
Cook about 2 hour for the flavor of the ham hock and tomato.
Take ham hock out of pot.
Put in spinach/escarole, yellow squash, black bean, garbanzo bean. Cook low for maybe 10 minutes.
Take about 2 cup of all in the pot out of pot and put in bowl to mash to the paste. Put back in pot (this make it thick)
Take ham hock that you put out before, and cut off the fat, cut ham in peices and put in the pot. Finish!
Now you have low calorie, many vegetable nutrients, AND VERY SMALL amout of meat for the flavor, B-12 and iron.

So it is a BIG pot of food with only about 4 ounces of meat for many meals, but many vegetables.
Delicious and healthy and not alot of money to make.
My grandfather and brother love this!
